LA CHAPELLE LEOGNAN PESSAC-LEOGNAN

The current vineyard in Pessac, replanted in 1989, is made up of 70% Cabernet Sauvignon and 30% Merlot. The omnipresent hand of man attests to the care taken at all times to shape the double Guyot pruning. With respect for the environment, the analysis of treatments is triggered by knowledge of the terroir and the winemaker's experience in relation to the climate. The harvest, which is entirely manual, begins in October, depending on the ripeness of the grapes in each plot. The ‘cutters’ place the bunches in crates so as not to crush the berries and to protect them from oxidation until they reach the cellar.
