Created in 1923, the La Chablisienne cooperative now covers 25% of the Chablis vineyards, with over 300 winegrowers. Terroir: Spread over 1175 hectares, the Chablisienne vineyards are planted on Kimmeridgian soils with alternating marl and marly limestone with deposits of small oysters. The plots are generally south-east, south and south-west facing, with a mosaic of different climates. Viticulture: The cooperative has the particularity of harvesting the grapes in the form of must in order to immediately assess the quality of the different plots.
