
SOIL: 8 hectares of vines on the south-east mid-slope of the Saint-Amour vineyard, at Les Billards, Le Carjot and Vers L'Eglise. The soils are very varied: ancient rock scree, clay at Clos des Billards, bluestone at Le Carjot and granite at Vers L'Eglise. VINIFICATION & AGEING: Traditional vinification with vatting for around 15 days in toasted vats. Aged in vats for at least 9 months. FOOD & WINE PICTURES: Ratatouille, chicken with tarragon, rabbit terrine, strawberry tart.
