Doc Vino dei Poeti Rosé Prosecco is made with Glera grapes from the DOC Treviso region and Pinot Noir from Friuol, for its superior quality.
The two grape varieties have different ripening times and are vinified separately. Glera is generally harvested in mid-September.
The grapes are destemmed and gently pressed. The 1st fermentation takes place in steel vats after the addition of selected yeasts. The Pinot Nero, on the other hand, is harvested at the end of August. After harvesting, the grapes are destemmed and gently pressed.
Before fermentation, a maceration of around 12-16 hours is carried out in contact with the skins to extract the colour.
