Maison Castel offers you, through its Grande Réserve wines, a selection of recognized grape varieties from Pays d’Oc. Vintages carefully selected and vinified with particular attention. Can you differentiate their character? Terroir: This Chardonnay Grande Réserve, chosen from the Pays d'Oc terroirs, benefits from the Protected Geographical Indication (PGI). The Pays d’Oc, thanks to the diversity of its soils and its Mediterranean climate, allows this grape variety to reveal its full potential, particularly through its rich aromatic palette. Vinification: The selection of grapes and careful attention to vinification give this wine its character and elegance. Separation of free-run and press juices, then settling. The musts are sent for fermentation between 15 and 17°C to enhance the tropical and orchard fruit aromas. The wines are then aged on fine lees for 2 to 3 months, with regular stirring, providing more volume on the palate and aromatic complexity.
